45 ml (1.5 oz) London Dry Gin

30 ml (1 oz) Earl Grey tea (strong-brewed, cooled)

20 ml (2/3 oz) Fresh lemon juice

15 ml (1/2 oz) Honey syrup (1:1 honey to water)

5 ml (1 barspoon) Orange marmalade

2 dashes Angostura bitters

60 ml (2 oz) Dry brut sparkling wine (preferably English)

1 piece Lemon twist

Chill a coupe or Nick & Nora glass.

Add gin, Earl Grey tea, lemon juice, honey syrup, orange marmalade, and bitters to a shaker with ice.

Shake hard for 12–15 seconds to fully integrate the marmalade and chill.

Double strain into the chilled glass to achieve a poised, silky texture.

Top gently with dry brut sparkling wine.

Express the lemon twist over the surface, rim the glass, and place it as garnish.
