60 ml (2 oz) White rum
25 ml (0.75 oz) Fresh lime juice
15 ml (0.5 oz) Honey or sugar
6-8 Fresh mint leaves
90 ml (3 oz) Soda water
1 pinch Chili flakes (optional)
Mint sprig, for garnish
1 piece Lime wheel, for garnish
Muddle mint leaves gently with honey and lime juice.
Add rum and ice.
Top with soda water and stir.
Garnish with mint and lime.
Add a tiny pinch of chili flakes on top for Thai heat if desired.
